    In the Surface tab is it showing the correct UV?

    Check the shading rate in the advanced tab of the render settings pane, the lower it is the better quality you get, the higher it is the more chance you'll have of seams showing.

    I restored to default in the render settings, and now everything works perfectly!

    Glad I asked, would probably have spent hours trying to figure it out.
