I haven't been on the site for ages and notices a whole lot of changes... First of all, what exactly is a DIM installer and does it work for Poser only on a Mac? What is the difference between a regular installer? Thanks :)

You can set DIM up to only show you Poser files and 32 or 64bit systems. DIM is a download manager.

The Dim Files in your Products Library are standard Zip format also. So work for any platform.

How is it different from the regular installer? I'm just downloading the Poser zips as usual...

The old Mac zips contain installers; the DIM zips are just the content files, no installer application. You can manually extract those zips, or use the Install Manager application to install them (or you can use it just as a downloader, if you prefer installing manually). Since the DIM zips are just content they work on both Windows and Mac.
