Is there a way to permanently change the default material to flat gray ???

No kiwi_gg, this is not possible. What you can do is giving it the desired material (set the sky as you wish, image size, etc) and save that scene as [default.br6] (without the brackets) into the location where the Bryce.exe file resides - and overwrite the existing. Each time you start Bryce, default.br6 is loaded. I hope it helps.
