What is baking?

In regards to posing, what is baking exactly? Sometimes when I create a good pose I want to use again, I save it as a pose preset but that's about it. Should I be baking too?

Bake to Transforms, perhaps? That takes the Pose control settings (things like the arms raise cotnrol on the figure or hand grasp) and turns them into values on the individual bone rotations.
