DAZ keeps changing my render Environment Map to its default HDRI.
How to stop it?

If you use Dome Only or Dome and Scene, and set the HDRI map to None in Environment Map slot... yes, the default "...ruin" map will be back when you open the scene next time. But if you assign other map there, it won't change. So you have the former issue or the latter?
If it's the former, well this 'feature' actually makes sense...Since you use Dome or Dome & Scene, there should be an HDRI map with at least one light source... If you don't assign one, DS resets the default for you... Actually this "reset" is done when you save the scene file, so even if you delete the map by editing scene file, each time you save the scene, it's reset...
If you DO need such a 'remove' action, technically, you may save a Render Settings Preset ( just tick Environment Map node ! with no map there) , create an action for it and assign a shortcut key. Then just press the shortcut to remove the map, each time before render. I used to do this before but finally I gave it up... I always use a map there.
Click on the Map, select Browse and delete it. I do this all the time with new Studio updates and don't have any problems. Occasionally you get a product that wants to load it but I just click ignore and carry on. Save the scene as _default scene and have this load on Startup and under new and it shouldn't ask again until another update then I just delete it from the computer again :)
This "brutal" way is also doable ... or rename...!
